I really had fun in making this, especially the pastry cream it self. Soft and creamy, wi
th the essence of vanilla. I put on top, fresh slices of strawberries and mango (keeping it tropical here in florida) with some blackberries and blueberries. Plus on top, i put a nice apricot honey glaze.
When you make these tarts, never store them for more than a day.... the crust will get soggy. This is make it now eat it now. The only way to do it ;)
